
DUCK SOUP
By far my favorite concept, Duck Soup created customizable soups to order.
Yes, customizable, and amazingly delicious. Over 20 years of developing winning concepts, I had acquired fabulous recipes from some of the country's best up and coming chefs who had dropped into Colorado to spend a ski break before starting their careers in some of the best restaurants in the country.
We cooked proteins ahead, veggies al dente, and kept these separate until ordered .
Bringing the ingredients up to temp first, then adding the 'broth' allowed us to provide just in time flavor and textures at any time of the day, eliminating the classic soggy pastas and low nutrient veggies you would find in most restaurant soups in the afternoon. It was our 'Secret Sauce'.
We featured smaller portion 1/2 sizes, and combined them for one-price combinations that eclipsed the difficult to order QSR competitors.
